400 Conigli Cardamom Volume 3
It is a distillate obtained exclusively by the infusion in juniper distillate of cardamom seeds, without the addition of any essential oils or chemical flavourings. The juniper distillate itself is the result of the aromatic extraction of juniper fruits infused in ceral alcohol.
The process is quite complex and fragmented, developing in several phases: from the softening of the seeds in a water bath to the extraction of the aromas, from the crushing of the pods to the subsequent decantation.
Additional and complementary phases, studied in instalments of time, complete the brewing process and contribute to the characterisation of the product.
The aim is to obtain a base that is linear, gentle and not particularly characterising, but as suitable as possible for enhancing the flavour.

Filtration also takes place 'artisanally'. The distillate is taken 'by gravity' and passed through specially made conical linen and cotton sieves to keep the organoleptic profile as unchanged as possible. This avoids forced filtering, which in some cases could deplete the distillate of its more aromatic components.
