As the name indicates brings in the interior all the spirit of the archipelago namely with one of its most characteristic fruits, the pineapple. It is a clearly fruity Gin where the pineapple occupies a prominent place. The cardamom is also notorious as well as the Galician lemon which gives it some acidity in the middle of the race, finished with the characteristic sweetness of the fruit. The juniper appears somewhat embarrassed in this set, although present, can not impose its aroma, serving more as a support to the fruit. In total, there are 19 botanists used in the distillation of the Azor.
